Cedar-Plank Smoked Salmon
A side of salmon cooked on a soaked cedar plank, glazed with maple and lemon, catching just enough smoke to turn silky and fragrant.

- 1 side of salmon (about 1kg), pin-boned
- 1 untreated cedar plank, soaked 2 hours
- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 1 lemon, half juiced and half sliced
- 2 cloves garlic, minced
- 1 tsp flaky salt
- Cracked black pepper

Whisk the maple syrup, Dijon, lemon juice, and garlic into a glaze. Season the salmon with salt and pepper.

Lay the salmon skin-side down on the soaked plank and brush generously with the maple glaze. Top with lemon slices.

Set the plank on a 350F (175C) grill with the lid closed and cook for about 30 minutes, brushing once more with glaze halfway through.

The salmon is done when it flakes at the thickest point and reads 130F. Serve straight off the smoking plank.
